Anti-Inflammatory Sweet Potato And Coconut Muffins With Cinnamon, Ginger And Maple Syrup!
People love delicious muffins. However, most people do not know that they possess anti-inflammatory and antioxidant properties. The main ingredient in these muffins is sweet potatoes.
Sweet potatoes contain a lot of beta-carotene which is able to kill the free radicals in our organism.
They contain many nutrients and they are able to prevent chronic and acute inflammation.
This is the recipe for muffins with sweet potatoes.
You will need:
• 1 sweet potato
• 1 cup of brown rice flour
• ½ tsp. of pink Himalayan salt
• 3 eggs
• 1 tbsp. of baking powder
• ¾ cup of coconut oil
• ¼ cup of coconut flour
• 1/8 tsp. of ground nutmeg
• 1/8 tsp. of ground cloves
• 1 tbsp. of cinnamon
• ½ cup of maple syrup
• 2 tbsp. of olive oil
• 1 tsp. of ground ginger
First you have to preheat the oven to 400 degrees. Take a muffin tin and oil it. Afterwards with a knife poke the sweet potatoes and place them on the middle rack. Bake them for 1 hour and let them cool.
Add the maple syrup, almond milk and olive oil and mix them with the sweet potato. Stir well and add the other ingredients as well. The best way is to mix the dry and wet ingredients separately and afterwards combine both mixtures and stir them well. Transfer the mixture in muffin tins and bake them.
When the muffins are done you can enjoy them without guilt.
